In order to understand the cultural phenomenon of Souvla, you can’t realy go to a restaurant and you cannot go to a commercial establishment. You must go to a masterclass thought by people who understand the cultural significance of Souvla and can replicate the experience to the highest degree with quality and instruction and friendship and love of craft.
The centerpiece of the open kitchen is a wood-burning BBQ pit that allows us to showcase the region’s versatility while staying true to its classic cooking methods. Preparation and cleaning takes place in the fully equipped kitchen.
Meal is served on the patio in sharing meze style. Guests will find bare tables and raw nature surroundings, service that’s refined slow and relaxed and a dining experience that’s both delicious and entertaining.
A sizzling BBQ needs an appropriate venue to boot and what better venue can you find in Cyprus?

Three bottles of wine will be served through out the experience. Chosen for their ability to stand up to the season’s menu in balance. Besides exploring these wines I strive to present the winemakers’ vision in your glass and the experience is fun, while being informative.
I only showcase boutique wineries and not mass-produced commercial wines, so you get the chance to taste the best wines Cyprus has to offer.

The main objective is to showcase the quality and diversity of the ingredients and the wonderful people who raise, grow and produce them. I love to cook over embers in wood-burning hearth because it gives a nod to the historic food culture of our area while growing and creating something new.
