Let me tell you a little bit about myself!

Hi I'm Pambos

My story begins on the beautiful island of Cyprus, in the captivating town of Limassol. I’m a firm believer that family is everything, and I’m blessed to have an outstanding wife and two incredible teenagers, Andreas (soon to be 18!) and Demetra (16 years young).

My insatiable thirst for knowledge has led me on an academic journey, graduating from the renowned United World Colleges (AC90) and immersing myself in the world of Business Marketing. I have a natural ability to take on different roles, from running a successful restaurant to becoming a skilled trainer. But, my absolute favorite role is creating unique and unforgettable experiences for my guests. It brings me great pleasure to leave a lasting imprint on their hearts that will be remembered for years to come – much like a fine wine that leaves a pleasant aftertaste.

I’m always striving to challenge myself to be even better, but ultimately, it is my warm and approachable nature that sets me apart. My goal is to ensure each experience is more exceptional than the last, leaving my guests feeling inspired and full of joy.

My story

Hospitality has always been my lifelong passion and career choice, and I’ve been fortunate enough to have been deeply involved in the gourmet food and fine wine industry for many years now. With my extensive experience, I’ve established strong relationships and connections with producers not only on the island but beyond as well. It all started in 1996 when I began sourcing European delicatessen food and fine wines for import, and from there, I have not looked back. My love of gourmet products has taken me to the stunning countryside of Italy, France, and Greece on many occasions; traveling and seeking out the finest gourmet offerings has not only expanded my knowledge but also given me a unique perspective on these countries and their cultures.

I’m proud to be a certified Sommelier and hold a Professional Sommelier Diploma from the prestigious international sommelier association ASI (2006). Additionally, as a founding member of the Cyprus Sommelier Association, I am a respected member of the wine community. I am equally passionate about Cyprus wines, and as a trustworthy ambassador of Cypriot Wines and Viniculture, I am actively involved with the Cyprus Wineries Association. My skills and knowledge extend to wine-related services such as consulting for independent restaurant operators, wine traders, and local wineries. Lastly, I enjoy organizing and leading wine events, and trips for wine enthusiasts, visitors, and residents.

Wow, Wow, Wow. What a wonderful unique experience with a down-to-earth, thoughtful guy… Pambos is very personable and knowledgeable. It was like an old friend taking you on tour and having that friend being a younger Zorba. Pambos -- Zorba the Cypriot… We felt that he loves his country, and we understand why. About Cyprus

Cyprus has a long history in wine making. As a matter of fact, archaeological discoveries have shown that wine was produced on the island about 5,500 years ago, putting Cyprus on the map as the oldest wine producing country in the Mediterranean. Nowadays the industry is radically changing. Updated modern winemaking techniques and practises being introduced and more work done in the vineyards by well equipped young professional wine makers. As one of them stated a few years ago:

 ‘Cyprus produces New World wines on Ancient World soil!’

Last time I checked there were 106 registered wineries on the island, of which some are active and some not. Some accept guests and some don’t and only 54 of them are exposed in the retail market. Very easy to get lost and misled unless you have some inside information from someone who is constantly visiting the wineries and their vineyards and can open a few back doors.
