And guess what? It’s also the traditional day for baking flaounes—those scrumptious Easter cheese pastries! This is a serious undertaking—the entire house fills with the aromas of mahlepi and masticha (regional aromatic spices). The filling is a rich blend of mature goat’s cheese, fresh anari cheese, and often mint. Baking them on Holy Thursday ensures they’re ready for the Saturday night feast.
The Beautiful Mourning: Good Friday
Tomorrow, Good Friday, is unequivocally the day of mourning—funeral day. The churches transform. They are elaborately adorned with flowers, particularly fragrant roses and lilies, creating a truly spectacular, almost Pinterest-worthy floral display around the Epitaphios (Christ’s tomb).
