Prepare Wine to Serve
• Please prepare to serve white wines at fridge temperature and red at 60 f/ 15 c –Starting at low temperatures allows the wine to gradually release the aromatic reactions as temperature naturally alters.
• Glassware: use your preferred glass, the ones that you feel comfortable drinking wine in. Ideally I‘d like you to have a different glass for each wine or at least two glasses so you can perform a comparative tasting.
• Have some water and dry bread to rinse your palate when necessary.
Prepare yourselves
• Optionally and if you are a wine geek you may want to use the Tasting Sheet to mark down your notes. Please have it ready on a separate device for in-depth tasting experience.
Test your internet connection and join a few minutes before to make sure everything is working smoothly.
There is a sequence of steps used to evaluate a wine, and they are done in a specific order. However tasting a wine is not an once-off event but a repeating series of the procedure going back and forth.
Wine Tasting is a very personal experience simply because it’s not possible to get into one’s mouth and point out where that strawberry flavor is. You will be guided through your own sensory exploration but not directed or dictated.
Having said that please do come up front with any questions you may have. Interaction is a viral component to the success of our experience. Be thoughtful and interact wisely. Seize this hour to talk about the interesting wine stuff. the Wonderful World of Wine is full of surprises.

Q:- What is an Appellation?
A:- In short it’s a combination of the Region, Geographical Indication and Designation of production of a wine. A well known appellation is Champagne in France while the word’s oldest wine with a designated origin, still in production, is Commandaria wine from Cyprus
A wine’s origin is a key part of its identity, as it implies something about its style and likely quality. Many thousands of official placenames are used on the world’s wine labels. Some of these indicate only the wine’s origin, while others combine origin, style and quality all into one.
——————-
Q:- What do the tail-terms ‘Classico’ in Italian wine and ‘Village’ in French wine mean?
A:- These terms refer to a smaller designated area within another appellation (e.g. Chianti Classico DOCG / Cote du Rhone Village AOC). Wines classified as ‘Classico’ / ‘Village’ must meet higher standards than those of the generic appellation title. They are from vineyards in areas that show potential to produce distinctive wines of good quality.
——————-
Q:- Can big producers make great wines?
A:- In short the answer is: Yes! They have the means and the money to access the best resources in scientific knowledge and latest equipment. They also have the motive of reputation to stand up to.
Besides their honest and reliable entrée range like Koonunga Hill, Penfold’s is a good example of a giant producer who has a unique great wine of the world in its portfolio. That is the highly collectable ‘Grange’.
—————–
Q:- What does Reserva mean?
A:- While outside of Italy the word “reserve” can mean many different things depending on where the wine is made, Italian wine law stipulates that Riserva wines are aged for a longer period of time than wines that are not labeled riserva. Riserva wines also tend to use higher quality grapes.
Some common standards for some of Italy’s most popular Riserva wines:
Amarone della Valpolicella Riserva: Aged for at least 4 years
Barbaresco Riserva: Aged for at least 4 years
Barolo Riserva: Aged for at least 5 years
Brunello di Montalcino Riserva: Aged for at least 5 years
Chianti Classico Riserva: Aged for at least 27 months
Vino Nobile di Montepulciano: Aged for at least 3 years

Q:- What’s Ladybug taint in wine?
A:- Ladybug taint is a wine fault caused by the unintentional introduction of Coccinellidae beetles into the winemaking process, and is characterized by the presence of undesirable peanut, green pepper, asparagus, earthy, green beans and musty aromas and flavors in affected wine. You can read about it in this scientific study

Q:- What’s an easy way to learn some basics about wine tasting?
A:- WineMasters Class is a complete wine course for all sort of wine scholars, professionals and food & wine enthusiasts.

The Wine Styles
Let’s sniff out the details about your favorite wine style. The more you know, the better the wine. Click through your collection of wine profiles to sip them in.
Sauvignon Blanc accounts for more than 85 percent of regional production. Sauvignon Blanc from Marlborough exploded onto the world wine scene in the 1980s and 1990s. Such was the success of that it is widely regarded as the variety’s New World home.
The wine is noted for its relative lack of subtlety, its intense flavors of green pepper and gooseberry, and a character that has been famously described as “cat’s pee on a gooseberry bush”.
Marlborough Sauvignon Blanc remains the bread-and-butter performer for the industry, and many wineries from outside the region own or lease vineyards, or buy grapes or wine to be able to offer this key product and strengthen their portfolio.
Silky pale pink colour ranging from salmon to very light pink and onion skin. Their nose is complex and expressive and displays floral notes along with a very broad array of fruit aromatics – citrus, tropical fruits, sun-ripened fruits and fresh red fruits. Their palate is elegant and ample yet also aromatic and persistent, and consistently shows great balance between roundness and freshness.
Cabernet Sauvignon (kab-er-nay saw-vin-yawn) is one of the most respected grape varieties. The grape is widely grown throughout the world and is known to be consistent, with complex flavors, that develop after long periods of time. It is the most planted of all the red grape varieties. The varietal is a cross between Cabernet Franc and Sauvignon Blanc.
Cabernet Sauvignon wines tend to have deep color, good structure, and a full body. They are tannic in youth, especially when aged in oak and often require a few years to develop. This is a wine that can age. Because of the tannin in Cabernet Sauvignon, vintners tend to mix this grape with at least one other to reduce the “astringency.” Usually a Cabernet Sauvignon blend is made with merlot, as it is not as tannic and brings a nice fruity flavor to the wine.
When the grape is produced in a cooler climate you will get more red fruit and a lighter style. The warmer climate produces more black fruit-forward wines with higher alcohol and tannins. The varietal requires plenty of heat and sunny climates to fully ripen. It is at home in warmer climates. These vines thrive well in sand, gravel and stone soil environments.
Some of the dominant flavors on the nose and palate include black currant, black cherry, eucalyptus, mint, bell pepper (cool climate); dark chocolate, cedar, vanilla, tobacco, (aged in new oak ); coffee, caramel, cigar box (well-aged).
Merlot (murr-low) is a red wine grape variety with deep historical roots in Bordeaux and Southwest France.
Merlot is a much fruitier wine than Cabernet Sauvignon. It has a nice flavor, reminiscent of black currant. Merlot has a beautiful dark color, is full-bodied and is high in alcohol content. Merlot is also the most planted grape in Bordeaux and is very popular in California, Italy, Chile and other regions where Cabernet is grown.
Merlot wine, known for black cherry flavors, silky tannins, and smooth finish, is easily confused with Cabernet Sauvignon, its frequent blending partner and sibling grape. Both Merlot and Cab Sauv are offspring of the Cabernet Franc grape.
In the vineyards, the Merlot grape matures early and ripens fully even in slightly cooler climates. In recent decades, the grape’s presence continues to increase due to its reliable ripening characteristics.
The Regions
We are going on a journey tonight! We have a good mixture of wine producing regions. That will help us get an overall feeling of the diversity of wines produced in different parts of the world.
Marlborough is New Zealand’s most important wine region by far. It is particularly famous for its pungent, zesty white wines made from the Sauvignon Blanc grape variety. Many other grape varieties also perform well here albeit on a tiny scale.
Sea breezes are a vital part of the Marlborough terroir. Sunshine during the day is tempered by the wind, leading to a substantial diurnal temperature variation, which gives the grapes time to develop an expressive varietal character without losing their characteristic acidity.
The official Geographical Indication area stretches northeastwards up the Pacific coast and there are three main subregions; the Wairau Valley, Southern Valleys and the Awatere Valley.
While non-packaged wine shipments (for own-brands and brands bottled in the market region) account for a little less than 40 percent of total volume, these still command prices of which other counties’ bulk wine exporters would be envious. Indeed, the New Zealand wine industry, with Marlborough at the spearhead, has the highest average price per liter of any country exporting wine.
The vineyards of Coteaux Varois en Provence are located in the heart of “calcareous Provence” in Southern France. In its basins and narrow valleys, production is strictly limited to 28 communes grouped around Brignoles,
These grapevines grow at altitude: at an average of 350 metres, with the highest plots at 500 metres. Additionally, the presence of rocky mountain ranges provide a natural blockade against maritime influences.
AVA = American Viticulture Area
California is the largest and most important wine region in the USA. It produces 90 percent of American-made wine. It also supplies more than 60 percent of all wine consumed in the country. With mountains, valleys, plains and plateaux, California’s topography is as complex as its climate, offering winegrowers a bewildering choice of terroir. Even though a wide range of traditional European vines is also cultivated, the principal varieties grown in California are Cabernet Sauvignon and Chardonnay.
Shopping Tip:- Generally, the cooler regions closer to the coast are better suited to cool climate grape varieties such as Pinot Noir and Chardonnay. Further inland – where the climate is much hotter – some of California’s most famous red wine is made from Cabernet Sauvignon. Zinfandel produces some outstanding examples throughout the state.
